I always get coleslaw cravings & I love it with many dishes as a side. I find some supermarket ones too creamy and rich that they upset my stomach. Although others can be fine, its just not fun finding out the hard way what ones I can stomach!. So I decided to make my own quick and easy coleslaw at home, using tescos ‘ free from’ range, mayonnaise, so that its both gluten & dairy free & easy on the tummy. If you find that acidic foods don’t agree with you, this can still be made without the vinegar & you can use less mustard too.
What I used
- White Cabbage
- Red Cabbage
- White Onion
- Sour Cream
- Black Pepper
- White Vinegar
What I Did
Wash & Cut the red & white Cabbage – shred both thinly, peel carrots & cut the white onion finely. In a separate bowl, mix the mayonnaise (to whatever size portion you choose to make) with a teaspoon of mustard & white vinegar. Add some parsley & a dollop of soured cream. Then sprinkle in some black pepper.
TIP: Add the sauce to the salad gradually so you get a right balance.
Pop it into the fridge and its ready to serve!
